Peony is a less utilized herbaceous plant of ornamental and medicinal relevance. The petals are rich in bioactive phenolics and hence, the development of efficient extraction is required for maximum recovery and bioactivity. This thesis deals with extraction processes using assistance technologies or green solvents and encapsulation systems of natural pigments in order to exploit and apply them in the food, cosmetic and pharmaceutical industries. In this goal, microwave-assisted extraction (MAE), ultrasonic-assisted extraction (UAE) and Ionic liquids (IL) were evaluated for the extraction of carotenoids and anthocyanins from Vietnamese plants. A confirmatory and sensitive procedure has been developed for the determination of 40 currently used pesticides (Cups) in airborne particulate matter (PM 10) at trace level. The proposed method includes extraction of PM 10-bound pesticides by microwave-assisted extraction (MAE) followed by a gel permeation chromatography (GPC) clean-up and determination by GC-MS/MS. The injection mode and the main parameters in MS/MS were optimized. The matrix effect was also evaluated. Recoveries ranged from 70 to 120% except for pyrimethanil and pirimicarb. The aim of the study was to evaluate the efficiency of an ultrasonic pretreatment at different amplitudes and extraction times, on the content of antioxidant compounds (phenolics, anthocyanins, ascorbic acid) and total antioxidant capacity of black currant fruits. Additionally, the influence of sample preparation (frozen storage/drying) was evaluated. Extraction was performed in 60% ethanol with 0.15% HCl at a solvent-to-sample ratio of 15/1.
